‘My [bake has] found its missing piece’: ADM plugs white space with ‘whole palette of white’

ADM has launched PearlEdge, a bouquet of proprietary white colour solutions that add a snowy luminescence to bakery icings, glazes and fillings.

British author Gilbert Keith (1874-1936) was famed for his description of white: “not a mere absence of colour; it is a shining and affirmative thing, as fierce as red, as definite as black…”

ADM is aiming to add the same intensity to baked goods with the PearlEdge range, which delivers ‘game-changing’ brilliance, stability and uniformity.

Ticking boxes

The line has been designed to conquer the exacting demands of consumers and the toughest formulation challenges, where other plant-based white colorants typically fall short.

Like its other offerings in its Colours from Nature portfolio, PearlEdge is derived from natural sources, including native corn starch, ticking the clean label box.

Robust quality control is key to produce a precise, premium white shade without the need for modification, and ADM has been able to achieve that with its vertically integrated supply chain, managing each step of the sourcing process.

Additionally, the new solution leverages on the company’s patent-pending tech and extensive formulation expertise.

“Our team has been diligently working to perfect our new line of white colour solutions, assuring its groundbreaking quality and performance,”​ said Hélène Moeller, VP of global product marketing, ADM.

“This rollout meets the evolving needs of customers and consumers, as brands look for titanium dioxide (TiO2) replacements that not only provide a bright white shade, but also meet clean-label targets.”

A blank canvas

The PearlEdge portfolio is designed to address a variety of applications, markets, certifications and regulatory needs.

Specifically, it performs exceptionally well in bakery icings and fillings and confectionary, but works equally as well in powdered drink mixes; sugar-free offerings; dairy and dairy alternatives; soups, sauces and dressings; and even meat alternatives.

PearlEdge also delivers elevated sensory appeal as an opacifying base coat for vibrant colours, along with a smoother texture in certain applications.


Helps meet clean label targets as its derived from natural sources through ADM’s vertically integrated supply chain.

Conquers the toughest formulation challenges, where other plant-based white colorants fall short.

Utilises patent-pending technology, specifically for PearlEdge Silk and Satin, which provides superior stability, bright white intensity and smooth texture in certain applications.
