Puratos claims leading place in the evolution of the bakery industry, inventing the world's first complete bread improver in 1953.

Daniel Malcorps, CEO of the Puratos Group, explains one of Puratos’ innovation strategies today: Reproducing “the good breads of the good old times”.

The company dug out documents about the best breads of the Roman era, which came from the Puglia region. They then found 4000 different microorganisms found in that region that could be responsible for the fermentation process.

Seven of these were selected by Puratos, using sensory analysis, to make breads that are suited to modern tastes.
