Enzymes specialist DeutscheBack ramps up activity in China and Latin America

Baking ingredients supplier DeutscheBack is increasing its presence and capacities in Latin America and China to meet growing demand.

The business – which is part of the Stern-Wywiol Gruppe and provides customized ingredients for bread, rolls and pastry goods - has enlarged its facilities in Wujiang in China and in Mexico City.

Challenges for local industry

Growing demand for bread and other baked goods is presenting the local baking industries with major challenges, said DeutscheBack managing director Lennart Kutschinski, adding that the supplier’s knowledge of enzyme design for bakery products played an important role in overcoming these.

The fluctuating raw material situation demands individual solutions and prompt responses​,” he said. “That is only possible with research and development facilities of our own, adequate production capacities and a well-trained team on the spot​.”

Growing Chinese workforce

Ten new employees will be taken on at the Chinese facility, and will work in research and development, production, and customer care, while the applications technology and production departments have been increased.

DeutscheBack was already in a strong position because of the presence in China of its sister company, flour improvement specialist Mühlenchemie, said Kutschinski: “As the interface between mills and bakeries, we make the way to the end product more efficient.”

He added that Western bakery products were growing in popularity in China, and that DeutscheBack could offer local bakers solutions based on the experience of the group’s international network.

Mexico City R&D team expanded

DeutscheBack has brought in new employees in research and development at its Mexico City facility, and a new customer consultant.

Emphasis will be placed on seeking solutions for prolonging the shelf-life of bakery products and meeting increasing clean label requirements, said the supplier. It will also focus on special applications for wheat products to cater to the growing market for tortillas and wraps in the region.

A new production line at the factory in Mexico City has increased the site’s capacity, and a new plant for tortillas will make it possible to simulate the manufacturing process on an industrial scale, added the business.
