Trailblazer Food Products has moved into unsweetened flaked and shredded coconut production, amid claims it has spotted a niche in the market for natural ingredients.

The co-pack and private label business currently produces preserves and jellies, table syrups, drink mixes, Italian syrups, institutional pie filling and glazes, and savory sauces and marinades.

The manufacturer plans to produce up to 15 tons of coconut a day, using no additional sweeteners or preservatives at its factory in Portland, Oregan, US.

Natural, unsweetened coconut includes only natural sugars and fats, and no added salt, with reduced calories and carbohydrates.

Popular among cooks and bakers

Rob Miller, president and CEO, Trailblazer Food Products said consumers are increasingly looking for natural, more wholesome ingredients and unsweetened coconut has become popular among health-conscious cooks and bakers.

Bea James, senior manager of organic, natural and sustainable programs believes coconuts are a huge trend in the natural food world right now because they offer quick replenishment for hydration and electrolyte fuel.

Coconut is highly nutritious and rich in fibre, vitamins and minerals,” said Miller.

We continuously track industry trends, and immediately recognized a need for unsweetened coconut beyond specialty food retailers,” he said.

Store produce is pasteurized

Barbara Mendez, a NYC-based nutritionist and pharmacist claims fresh coconut water has not been pasteurized and it contains enzymes that help to detoxify and repair the body.

“Most of what you'll find in stores is pasteurized or from concentrate. It's still a great way to hydrate yourself and it will still contain minerals, but it’s pasteurized, therefore, not raw,” she said.
Trailblazer Food Products customers include; Kroger, Safeway, Costco, Walmart, Sam's Club, Unified Western Grocers, Western Family Foods, Topco, Boyd's Coffee and ConAgra Foods.
