M&S goes full sando mode

Marks & Spencer Food has launched its first-ever summer dessert sandwich.

M&S is leaning hard into strawberry season with a trio of pink-hued showstoppers, headlined by the Red Diamond Strawberry & Crème Sandwich (£2.80). Rolled out across its Foodhalls, this Japanese-style dessert sando features luxe Red Diamond strawberries, whipped cream cheese and crème fraîche, layered between slices of soft, sweetened brioche.

But that’s not all. Also joining the summer lineup:

Strawberries & Cream Mini Bites (£3.75): crunchy, chewy clusters of cornflakes, shortcake biscuits, marshmallow and dried strawberry, wrapped in a yogurt-flavoured coating.

Chef Heston Blumenthal is serving Wimbledon vibes with Michelin precision. His new dessert - Blumenthal’s Summer Time (BST) - is a multisensory journey through strawberries in all their forms: fresh wild berries, long pepper-macerated berries, pickled green strawberries and a red wine-olive oil dressing.

Wimbledon desserts don’t need to be fussy to win. Case in point: this Summer Berry Chocolate Traybake from the Easy Peasy Baking campaign by UK Flour Millers. It layers a cocoa sponge base with freshly whipped cream and generous handfuls of strawberries.

It’s an absolute ‘ace’ for viewing parties, afternoon teas or low-lift summer baking wins. It serves 12, so it’s a crowd-pleaser.

  • 175g self-raising flour
  • 150g light brown sugar
  • 50g cocoa powder
  • 1 tsp bicarbonate of soda
  • 2 eggs
  • 150ml milk
  • 150ml oil (vegetable or sunflower)
  • 450ml double cream
  • Strawberries

Preheat the oven to 160°C (fan) and line the traybake tin with baking parchment. Fully combine flour, sugar, cocoa powder and bicarb before whisking in milk, eggs and oil for form smooth batter. Pour into lined traybake tin and bake for 25-30 minutes. Allow to cool before removing from the tin. Whip the cream to soft peaks, swirl it on top and finish with berries – the more, the berrier.
