Bridor celebrates 10 years in pastry with lookback at some of its most successful collections

To mark the milestone, the French bakery manufacturer is looking back at the French patisseries that are as exciting today as they were when they were first created a decade ago.

Much has changed in pastry over the past 10 years, but the tradition of French pâtisserie has remained a constant – albeit adapting to new trends and evolving consumer demands.

It was back then that Bridor forged its collaboration with Maison Lenôtre to create sensation macaroons and petit fours. The partnership remains as devoted today, based on the shared values of high standards, excellence and creativity.

Maison Lenôtre started life in 1957 as a small boutique in Paris founded by Gaston Lenôtre and his wife Colette. Today, this prestigious brand – touted as being designed for chefs by chefs – is available to clients throughout the world and also sold in its own boutiques in Paris, Cannes, Berlin, Tokyo, Doha, Kuwait City, Riyadh and Shanghai. The company also aims to franchise its Lenôtre Culinary Arts School on five continents to promote the ‘made in France’ know-how and provide advanced training for the next generation of bakers.

“Bridor is celebrating 10 years of pastry, which marks 10 years since we first started creating pâtisserie with Maison Lenôtre,”​ said Erwan Inizan, Northern European sales director at Bridor.

“This is an opportunity to look back at some of our most successful pâtisserie collections – and those that we collaborate with Maison Lenôtre – that consistently perform well. Over the past 10 years, we’ve worked hard to innovate across all of our range​s, giving our customers a continuous stream of outstanding pastries to choose from.”

The duo’s collabs are designed to provide the hospitality sector with the opportunity to tap into the major consumer trend for conscious indulgence with single serve pâtisserie.

Made with French meringue, the range of macarons feature a slightly dome-shaped smooth shell and a generous filling, making for a crispy yet melt-in-the-mouth delicate indulgence.

Each macaron has a filling made with either buttercream from Charentes Poitou PDO butter, fruit compote or whipped ganache for a light and modern texture.

Available in seven flavours: Vanilla, Raspberry, Chocolate, Lemon, Salted Butter Caramel, Pistachio and Coffee.

The Petit Fours range is meticulously finished, giving caterers the chance to enhance buffets, catering events and desserts.

Each Petit Four is made with select raw materials, including full cream with 35% fat, fruit compote, purées, fruit juices and dark chocolate for its intensity.

The tartlet bases are inspired by Breton biscuits made from 100% butter and the choux pastry is based on a traditional recipe that has a meltingly soft texture.

Available in three different trays, each pays tribute to the extensive know-how of French pâtisserie.

One of Bridor’s most successful collections in the past decade, macarons are an iconic French patisserie, characterised by their crunchy shell, soft interior and generous almond flavour.

Bridor’s range are made by hand for a perfect finish and all the colourants used are of natural origin. Available in eight popular flavours, including Passionfruit, Vanilla, Chocolate, Raspberry, Caramel, Pistachio, Coffee and Lemon.

The success of this original range prompted the French bakery manufacturer to introduce a further six seasonal flavours in a Summer Collection, namely, Orange Blossom, Strawberry, Blackcurrant, Coconut, Apricot and Rose.

These soft, oval or rectangular patisseries have attracted caterer for the past decade thanks to their extreme elegance and ready-to-serve formats.

Made from a biscuit dough enriched with ground almonds, pure butter and egg white, the financiers are available in four variants, including Lemon, Pistachio, Vanilla and Cocoa.

Beyond its collaboration with La Maison Lenotre, for the past 34 years, Bridor has teamed up with a range of acclaimed chefs to create original collections for high-end customers, including La Maison Pierre Hermé Paris,​ Meilleur Ouvrier de France Boulanger and Frédéric Lalos.

Established in 1988, Bridor is part of the Le Duff Group,​ which operates over 2,000 restaurants and boasts a 34,000 workforce. Bridor itself employs over 2,500 people, delivering 400 million products made annually to clients across 100 countries.
