Beneo rolls out first-of-its-kind instant functional rice starch to help bakers capitalise on clean label trend

Beneo has launched a precooked functional native rice starch that the plant-based functional ingredients specialist claims maintains its clean label status, even under harsh processing conditions.

Remypure S52 P.  can be used to create soft and creamy fillings for baked items, dairy desserts and cold processed sauces.

These applications typically have to withstand acidity and/or high shear during preparation, making it a challenge to maintain functionality under these conditions.

The pre-cooked rice starch performs just as well as modified starches in cold processing conditions that involve low pH and/or high shear, while maintaining its clean label status.

The trend continues to gain traction amongst consumers, with more of them shunning products with artificial ingredients for those with authentic and natural ingredients.

Beneo’s research found that 50% of Brits and three out of five German consumers ‘intentionally avoid products with artificial ingredients for eating cleaner, with 62% believing this is healthier'.

Food producers are answering this demand and Mintel’s Global New Product Database notes that one in four launches between 2015 and 2020 carried claims of being ‘all natural’, ‘GMO free’, ‘No additives or preservatives’ and ‘organic’.

“With the increasing demand from consumers for transparent product labels, we are always looking for ways to help our customers meet these market demands,”​ said Benoit Tavernier, product manager, Speciality Rice Ingredients at Beneo.

Taste and texture

Rice is considered a healthy ingredient by the majority of consumers – and is a familiar staple for many nations across the globe. Furthermore, it adds a creaminess and mouthfeel to a product, thanks to the unique characteristics of its starch granules.

According to Beneo, Remypure S52 P has performed well in taste trials, with bakery creams, spoonable dressings and ranch dips receiving positive feedback on their creamy textures and stability.

“Remypure S52 P has been developed for food producers searching for an instant clean label texturizer for food preparations that can withstand harsh process conditions, whilst giving an additional creamy aspect to the texture of the end product.

“It is the first rice starch of its kind on the market for this type of application and has already been well received in a range of taste tests.

“With the now extended Remypure range of functional native rice starches, Beneo is well set to support existing and potential new customers in their development process of various new clean label products.”
