Sales of bakery processing equipment to exceed $11bn by 2025

Increased consumption of baked goods such as breads, cakes, pies, cookies, and crackers, across the globe is driving the bakery processing equipment market.

According to a report by GMI​ (Global Market Insights) demand for frozen bakery products is increasing in emerging economies including China, India, and Brazil due to their low cost and availability and the bakery processing equipment market is expected to exceed $11bn by 2025.  

Food quality

GMI authors Ankita Bhutani and Pallavi Bhardwaj claim the introduction of robotics and automation technologies in food processing techniques allows food companies to enhance their productivity, efficiency, and food quality.

Based on type, the bakery processing equipment market comprises of: 
Mixer​ for mixing dough at maintained velocity to get required texture 
Slicer ​can be used to for cake slabbing, cake slicing, bar cutting and pastry slicing
Oven & Proofers ​a warming chamber that encourages fermentation of dough by yeast through warm temperatures & controlled humidity 
A dough sheeter ​is responsible for increasing the baker’s consistency and efficiency by flattening the dough into very thin crusts. Whereas, bakery molders ​mold or forms the dough into the desired size and shape. Other equipment includes depositors, rounders, pan greasers 
Based on application​, the bakery processing equipment market is segmented for processing of bread, cakes & pastries, cookies & biscuit and others which include pizza crusts, desserts, donuts

The increasing number of bakeries majorly in European and North American countries including the UK, France, and the US is supporting the adoption of these machines. However, the high fixed cost and maintenance cost associated with these systems are hampering the industry growth​.”

According to the Federation of Bakers, the UK bread industry is valued at around £3.8bn annually, employing a large number of people to meet the growing supply across the nation.

The average bread consumption in the region per year is around 50 kg per person. Amplifying demand for bread will positively influence the bakery processing equipment market outlook.

In terms of geographical expansion, the fast-growing food and beverage sector in North America has contributed towards boosting the remuneration scale of the global bakery processing equipment industry.

There has been consistent adoption of highly advanced equipment to meet bakery demand by leading food processing companies. According to reports, in 2018 the North America bakery processing equipment market share was estimated at $1.5bn.

American Bakers Association

According to the American Bakers Association, the baking industry in the US has an economic impact of nearly $153bn. The US government has levied strict rules and regulations to ensure food safety across the country.

The change in consumer pattern towards healthy food consumption has led to enhanced bakery products such as multigrain cookies, wheat bread, among several others. US food safety association has set up separate departments to monitor the safety and quality of food.

The growing demand for safe and innovative bakery products along with stringent safety norms will reinforce North America bakery processing equipment industry size.

Prominent players operating in the bakery processing equipment market share include GEA Group, Bühler Holding, Ali Group, Rheon Automatic Machinery, and John Bean Technologies Corporation, Baker Perkins, Markel Food Group, etc. The players are adopting new product launch strategies to offer differentiated machines and address varying customer demands​,” added Bhutani.

For example, in August 2018, Baker Perkins introduced a Tweedy SuperCooler mixer that improved bowl cooling with advanced control technologies to provide accurate management of dough temperature in any climate​.

This machine is suitable for high-output bakery plants for making burger buns, tin and pan bread, rolls and pizza bases as well as process dough, sourdough, sponge, and liquid sponges.

Players operating in the industry are also adopting strategies, such as mergers and acquisitions and strategic partnerships, to enhance their business capabilities. For instance, in April 2016, GEA Group announced the acquisition of Imaforni to expand its crackers and soft and hard biscuit processing line​.”

The report states demand for ovens and proofers is increasing in commercial bakeries due to their efficient heating and baking capabilities and the ability to maintain the ideal temperature.

Advanced technologies

Companies are manufacturing a range of industrial ovens using advanced technologies to offer improved texture and crust as well as low-power consumption.

Manufacturers are developing oven systems in various shapes and sizes to meet the requirements of customers across the globe. The increasing demand for breads, biscuits, and cookies in several countries will increase the adoption of ovens and proofers, contributing to the bakery processing equipment market growth.

However, Bhutani added, the bakery processing equipment market is witnessing the need for more machines with increased production capacities and reduced environmental footprints.

Equipment providers are working on enhancing the specifications and ensuring product reliability and accuracy. Moreover, the industry is also witnessing a huge demand for robotic and automated processing systems for more cost-efficiency, quality, and consistency​,” she added.

Robotic technologies help to reduce waste and increase product quality by around 20%, contributing to the industry growth. The growing demand for quality and safe food products across the globe is leading to the development of hygienic design of these machines to reduce microbial contamination​.”

The growing consumption of healthier bakery products that contain low levels of calories, sugar, and fat in North American countries including the US and Canada will drive the market growth.

Demand for cakes, pastries, and pies is increasing in the US due to a rise in consumer spending on premium bakery products.

Manufacturers are developing machines with hygienic designs due to the implementation of stringent regulations by the US government to ensure maximum food safety across the region.
