Food spray guns for coating and glazing can reduce time and wastage for bakers, says developer KREBS Switzerland.

The firm will launch its two spray guns – LM25 and LM45 – in the UK in the coming weeks and expand presence in Europe within the coming months. The two food spray guns were developed six years ago and are currently available in the US, Germany and Switzerland.

The mains-powered spray guns can be used for various coating materials including melted butter, egg wash, oils, glazes, jams, jellies and chocolate. They have adjustable speeds and interchangeable nozzles enabling use with both delicate and robust products – from cupcakes and donuts to baking trays and loaves.

Ben Beeching, KREBS Switzerland sales director for the UK and Ireland, said the spray guns offer a favorable alternative to the traditional brushing method.

“To simply use a brush for glazing or coating applications and this is both very time consuming – particularly for medium to large scale bakeries – and there is also a lot of wastage,”​ Beeching told BakeryandSnacks.com.

“It is quicker for bakers to use these spray guns; there are less man hours needed for something like glazing…The guns enable a quick blitz of the application – that could be to grease or butter a tray, spray chocolate onto donuts or apply sweet sauces to baked goods…It reduces the drip off or run off from brushing,”​ he said.

The spray guns are easy to clean as all parts are detachable and dishwasher-proof, the sales director added.

Beeching said that the guns allow for flexibility at production level. For example, bakers can use a slower spray speed and the fine-point nozzle for delicate coatings like on cupcakes or a higher speed and flat jet nozzle for more robust applications like coating a tray or tin of loaves.

The difference between the two…

“There is a very fine difference between the two spray guns and only a £50-60 ($75-90) price difference,”​ the sales director said.

The LM25 operates on 60W and the LM45 120W. “The only reason we offered a higher power version was to use with an extension tube that enables the coating material to be fed continuously and directly into the gun from the barrel,”​ he said.

He said the LM25 is better for spraying thinner viscosity materials whereas the LM45 is better suited to thicker materials.

An attractive alternative to paint guns?

Beeching said that the food spray guns offer an appealing alternative to paint guns that are widely used in industry because both guns carry an internationally recognized ‘food safe’ symbol.

The glass and fork ‘food safe’ symbol has been validated by the US Food and Drug Administration (USFDA) and the Laboratory of Zurich in Europe and identifies that the material used in the product is safe for food contact.
