The industry trade show, BIE in Birmingham, will see the UK and Irish release of a range of environmentally friendly convection ovens, which the manufacturer claims are the result of a two year R&D project.

The design of the BX eco-touch convection oven line, which was showcased at the IBA in Dusseldorf in October last year, was informed by baker’s increasing need for energy and time saving requirements to increase productivity, states the Swansea based bakery machinery developer.

New and improved functionality on the BX series, said the company, includes a colour touch screen controller, with a visual update of each stage of the baking process.

A total of 240 bake programmes can be stored across 12 product categories, with each programme containing up to six distinct phases,” states the manufacturer.

The company said that a multi-baked function can enable a baked goods production facility to bake four different products simultaneously, each with its own unique bake duration, to minimise bake time and reduce energy consumption.

A sleep mode function also lowers energy consumption by up to 66 per cent, claims the manufacturer.

“Essentially, the Sleep Mode directs the oven to revert to a user-definable, pre-set temperature after a given period in an idle state. After extensive research, the optimum temperature found for the oven to enter ‘sleep mode’ is 100°C,” said the company.

Roy Kitley, marketing manager at Mono, told BakeryandSnacks.com that the ovens were originally set to have their lighting generated by LED bulbs that would provide energy savings of 88 per cent compared to traditional halogen bulbs but due “to difficulties in our supply chain the ovens will currently be supplied with halogen bulbs.”

The company maintains that a seven-day timer feature allows the operator to pre-programme a desired optimum pre-baked temperature at a specific time for each day, meaning the ovens are immediately productive from the start of a shift.

And a diagnostics programme is also included in the new line, continued the firm, which constantly monitors the oven’s performance and also has an instant test facility to evaluate the ambient and thermocouple temperatures, the status and direction of the fan, the damper, the heater and the lights.
