New Synergy cheese ingredients designed to enhance flavour, mouthfeel

Savoury ingredients supplier Synergy has launched a line of cheese
ingredients designed to enhance flavour and mouthfeel while also
providing manufacturers with some cost benefits.

The new premium ingredients, Saporlait, can be used in a wide range of applications, including savoury bakery and snack products, ready meals, dairy produce and snack seasonings, said the company.

The ingredients were developed in collaboration with Synergys parent company Carbery, a leading cheese production firm.

"Saporlait has been designed to replicate and enhance the taste and texture of real cheese, but also offers superior practical and cost benefits. Combining Synergys expertise in savoury ingredients and Carberys heritage in quality cheeses, we have developed a premium range which caters to the current and future requirements of savoury food manufacturers,"​ said John Godwin, commercial director at Synergys savoury ingredients facility at Corby, UK.

The company also said the ingredients can be used in low fat and low salt applications to improve flavour and enhance mouthfeel.

The new portfolio includes Saporlait cheese YE, a blend of cheese powders and natural lactic yeast extract for flavour enhancement and the addition of creamy dairy notes.

Saporlait YEC, a combination of cheese, natural yeast extract and natural flavourings also forms part of the line, and is designed to restore flavour lost through cheese and fat reduction.

Saporlait dairy compounds are flavour and mouthfeel enhancers, supplied in a powder format, said the company. Other ingredients in the line include Saporlait cheese stocks and Saporlait named cheese powders.

"Saporlait ingredients are available in over thirty cheese profiles, from Dubliner, mature Cheddar, Red Leicester and Cheshire, to Emmental, Camembert, Ricotta and Manchego,"​ said Synergy.

"They hold a number of qualitative and practical benefits over the common alternatives. Compared to cheese itself, Saporlait ingredients are more cost-effective and they are easy to handle and use. On the other hand, unlike many cheese enhancers, Saporlait ingredients are 100 per cent natural, offering clean label declarations, provenance and full traceability,"​ it added.

According to the company, its new line of ingredients is cost effective due to an ensured consistency of quality.
