Millbo launches functional bakery ingredients

Italian-based bakery ingredients provider Millbo has launched a new ingredient mix together with a liquid sour dough for the bakery industry.

Italian-based bakery ingredients provider Millbo has recently launched a new ingredient mix together with a liquid sour dough for the bakery industry.

Fibremate is a special concentrate premix rich in dietary fibres. It can be used to enrich bakery goods with dietary, pre-biotic fibres of high nutritional value. It is also designed to have an exceptionally high Dietary Fibre content, however it can be easily blended into existing bakery recipes with no special recipe variations.

Fibremate has a minimum content of 70 per cent Total Dietary Fibre (TDF). Following Codex guidelines the mix can be used to prepare bakery items labelled as a Source Of Fibre and Rich In Fibre.

Millbo has also launched Galaxy, a liquid product obtained by fermentation of rye and wheat flour and successive filtration, by an exclusive process.

This dough mix is an extremely high acidity product, with almost all the acidity having been concentrated in the liquid part. Special processing is used to concentrate all flavouring substances in the mix and it is stabilised with added vinegar.

Millbo claims that Galaxy is a strong flavouring booster for any baked good. Its main applications are rye or multicereal breads. Typical dosages will be between 0.5 and 2 per cent of total flour. It is available in 10 litre plastic buckets or in 1 ton EBC and is mixed to be easily pumpable and metered directly into the dough making system.
