Quilon, India for producing cashew products used in chocolate,
cookies, baking, confectionery and ice cream.

Western India Cashew Company has inaugurated a new factory in Quilon, India for producing cashew products used in chocolate, cookies, baking, confectionery and ice cream.

The factory has been specified with European machinery which is commonly used for producing almond and hazelnut products for similar use - dicers, colour-sorters, roasters, etc. The factory also has quality assurance systems including metal-detection and dust-aspiration systems and follows HACCP principles.

Products include plain and dry-roasted diced cashews of sizes 5-8mm (Chunks), 3-5 mm and 2-4 mm (Toppers), 1-2 mm (grits) and less than 1mm (Flour). The diced product is much more evenly shaped and sized than other products.

Roasting brings out a strong flavour in cashew pieces and makes cashews more suitable for ice cream and chocolate applications. The degree of roasting is customised according to requirements.

The product is packed in partial vacuum modified atmosphere (H2 + CO2) in 25 kg vacuum bags with very high barrier properties to retain flavour and ensure a 2-year shelf life. Minimum Export quantity is 1 MT per shipment. Current customers for these products include Selecta Walls.

Future plans include production of cashew paste, slivers and slices.
