Nu-Tek Food Science has struck a partnership to bring its patented potassium-based salt replacer to Europe.
BakeryandSnacks.com spoke to John Musselman, European business director for Nu-Tek Food Science, about the technology and the company’s strategy in Europe.
The ingredient is based on potassium chloride but the patented technology works to form it into a single crystal and mask the unfavorable flavors often associated with traditional potassium, Musselman said.
It enables up to 50% salt replacement, he added.
“Europe is leading the charge in bringing healthier foods to consumers,” Musselman said.
Salt reduction is a global challenge and the firm will work to get this new technology to industry as fast as possible, he said.
