March NPD: Baking with cauliflower, eating avos on the move and packing in proteins

The free from, plant-based and protein packed trends are high on the list of consumer demands and producers around the globe are responding with innovative launches: BakeryandSnacks takes a look at what is hitting the shelves.

DNX
Peri-peri power

DNX Foods has launched its high protein Peri-Peri Chicken bar, the company’s first poultry bar, made from free-range chickens that are never given antibiotics or added hormones.

Traditional peri peri is an intense seasoning that originates from Portugal, combining African Bird’s Eye chillies with ingredients such as onions, lemon, oil and red bell peppers.

The Whole30-Approved 1.5 oz protein bars combine 13g of protein with organic vegetables and are Paleo and Keto compliant.

The bars are shelf-stable for a year, are non-GMO, free of gluten-, soy-, MSG and dairy, and do not contain added sugar.

DNX protein bars come in five variants, available online and through Amazon and in selected retail stores across the US at a RRP of $2.99. 

Cauliflower
Gluten-free baking with Cauli-flour

Cauliflower is the new kale, especially in baking, says Caulipower, which has just launched Cauli-flour in the US, a cauliflower-based flour that can be used for both sweet and savory dishes.

Cauli-flour is a vegan gluten-free flour that the company claims can be substituted cup-for-cup for traditional white flour for baked goods like brownies, muffins, cake, breads and cookies, as well as for breading and making pastry.

The flour is gluten-, wheat- and dairy-free, contains no GMOs and an excellent source of vitamin C. The company also claims it has fewer calories, a lower fat and sodium content and is higher in fiber than other gluten-free and baking mixes.

Caulipower made its first appearance at Expo West last year with its inaugural frozen cauliflower pizza crusts and pizzas.

The mixes come in two options – Original and Paleo – currently available on Amazon in 12 oz resealable pouches at a RRP of $8.99.

Snackamolé Products
​High five for avos

Snackamolé, the first pure avocado snack of its kind for busy people on the go, has been launched in the UK.

Created by UK-based Born Tasty, Snackamolé is made from ethically-sourced Hass avocados with a squeeze of lime.

The product is made in Mexico using a high-pressure processing (HPP) hyperbaric process – a cold pasteurization technique – that results in a product with a significantly extended shelf life and a vastly reduced microorganism count. Enzymes that cause browning are deactivated and organoleptic quality remains intact.

The vegan, nutritionally rich and convenient snack has an unopened shelf life of just over a month.

The 100g tub comes with a pack of low-fat popped chickpea and potato chips, which contain only 262 calories.

The company also makes a Snackamolé guacamole dip, which, with chips, is 224 calories.

Snackamolé is currently stocked at Co-op stores, Budgens, Londis and Nisa at a RRP of £2.50.

Simply Create
​The final touch

JF Renshaw has launched Simply Create, a new cake decorating range that comes with on-pack recipes and decorating instructions.

The range consists of 11 unique SKUs including Frosting (in Chocolate, Caramel and White Chocolate flavors); a microwaveable Belgian Chocolate Ganache with 70% cocoa solids; Pour Over Icing in Chocolate, Vanilla, Caramel and Sicilian Lemon; and Ready to Roll Fondant Icing.

Available to purchase in Booths stores in the UK.

​A cracker of a snack

In the US, Simple Mills’ new Fine Ground Sea Salt Almond Flour Cracker Snack Pack contains six single-serve packages of vegan, Paleo-friendly crackers made from a proprietary base-flour blend of almonds, sunflower seeds and flax seeds plus tapioca starch, cassava flour, organic sunflower oil, sea salt, organic onion, organic garlic and rosemary extract.

The crackers – which contain 2g of protein, Vitamin E and less than 1g of sugar – are free of gluten, grain, soy, corn, dairy, GMOs, gums, emulsifiers and other artificial flavors or fillers.

Available at Whole Foods for $5.99 per six-count pack.

​Clean cookies

Simple Mills’ new Soft-Baked cookie collection will also be hitting Whole Foods shelves across the US in June.

Each 6 oz package contains eight cookies and carries a MSRP of $4.99.

Made from whole-food ingredients like almond flour, honey and coconut sugar, the company claims they are the first gluten- and grain-free cookies to deliver a genuine soft-cookie eating experience without the gums, emulsifiers and extreme sugar levels of other gluten-free alternatives.

They are Paleo-friendly and free from soy, corn, dairy and GMOs, too.

Available in Chocolate Chip, Snickerdoodle, Peanut Butter and Dark Chocolate Toasted Coconut varieties.

​On the move

The maker of the patented CakeSafe transportation box has launched CupCakeSafe due to customer demand.

CakeSafe – LLC’s original product – keeps fully-assembled tiered cakes cool as well as safe from bumpy roads, inclement weather and other hazardous challenges during transportation.

The new CupCakeSafe features shelves with pins to keep cupcakes secure and tip-proof as well as individual cups to add to the stability. These shelves fit into a CakeSafe box, which provides the same insulation and protection from UV rays that tiered cakes receive in a CakeSafe.

The CupCakeSafe is also patent pending.

Available for purchase on the company’s website, a Mini CupCakeSafe retails at $149 for a set of four shelves (to be used in a CakeSafe). The CakeSafe box and CupCakeSafe shelves kit retails from $403.

Biena
​Go Girl Scouts

Biena has launched Girl Scout cookie-inspired Thin Mints Chickpea Snacks, to be rolled out in Whole Foods in June for a RRP of $4.49 for a 3.15oz pack.

The Girl Scouts of the USA (GSUSA)-licensed flavor features a Thin Mints and Fair Trade dark chocolate coating over Biena’s classic Sea Salt Chickpeas that contains 4g of protein and fiber at only 130 calories.

The launch of the Girl Scout Cookie-inspired Thin Mints Chickpeas Snacks will coincide with the roll out of other Biena products for the first time in Whole Foods, including chocolate-covered chickpea flavors—Dark Chocolate and Salted Caramel—and four of Biena’s savory favorites: Sea Salt, Honey Roasted, Barbeque, and Habanero.

Half the salt; all the taste

GoodMills Innovation has developed a new pretzel salt that allows bakers to reduce the salt content without consumers noting a visible difference.

Slow Milling Pretzel Salt Light SG allows bakers to achieve a rich decorative effect with up to 75% less salt in the décor and 50% less in the product as a whole. Baked goods take on a mild salty taste, while maintaining the typical crispness and the indulgent mouthfeel of conventional pretzel salt.

The pretzel salt is also water stable and therefore ideal for frozen bake-off products, as it does not cause unsightly burn marks when defrosted and baked.

The good adhesion properties of Slow Milling Pretzel Salt Light SG can be improved further when used in combination with the company’s GECKO Ultra, suitable to use with salt décor as well as with seeds, which are notoriously hard to fix to baked goods.

The big dipper

Cape Cod Potato Chips has introduced its newest line, Dippable Cape Cod Waves Potato Chips.

The thick-sliced, wavy-cut potato chips are available in three flavors – Sea Salt, Reduced Fat Sea Salt (with 40% less salt) and White Cheddar & Sour Cream, Cape Cod Waves Potato Chips – that provide a great dipping vessel.

The chips are made the old-fashioned way, one small batch at a time, sliced thick and cooked at precisely the right temperature in custom kettles that allow for careful monitoring of flavor, texture and quality.

Cape Cod Waves Potato Chips are available for MSRP $3.79 in grocery stores around the US, including Publix, Harris Teeter, Walmart, Stop & Shop, Shaw's, Hannaford and Market Basket, and online.

Food fit for angels

Angelic Bakehouse has debuted its Sprouted 7 Whole Grain Veggie Wraps.

The Non-GMO Project Verified wraps are available in three flavors, including 7 Whole Grain Beet, Sweet Potato and Kale & Spinach.

The wraps feature the company’s proprietary sprouting process and seven whole grain blend that includes red wheat berries, quinoa, oat groats, rye berries, barley, amaranth and millet.

The wraps are free from dairy, eggs, nuts and soya, and contain 5g of protein, 4g of fiber, 20g-21g of whole grains and 100-110 calories.

Angelic Bakehouse’s Non-GMO Project Verified sprouted grain wraps, crusts, breads, baguette and buns are available online and at select grocery stores. The wraps have a SRP of $3.99 per six-pack.

​Fun for kids

Incredible Foods has introduced its perfectlyfree School-Safe fruit bites.

Made with fruit puree and free from the top eight food allergens, perfectlyfree fruit bites are 100% plant-based, nutritionally rich and fun to eat.

The fruit bites are shaped like grapes and contain only 25 calories per serving (seven fruit bites) and only 5g of organic sugar per serving.

perfectlyfree are also non-GMO, certified kosher, vegan and free from gluten, dairy, wheat, soy, eggs, fish, shellfish, peanuts and tree nuts.

Available in four flavors – raspberry pomegranate, mixed berry, pineapple mango, and strawberry banana – the perfectlyfree fruit bites can be found in the chilled produce section of selected New England supermarkets at a suggested retail price of $3.99 for five snack packs containing seven fruit bites.

The company is planning on broader distribution over the summer months.

Finger on the pulse

Warburtons has expanded its range with the launch of the Pulses & Seeds Batch loaf.

The UK’s number one bakery brand has introduced the new loaf to capitalize on the growing popularity among consumer for pulses.

Naturally rich in plant protein, pulses are now eaten by consumers at 536 million occasions, up by 17% since 2015, according to Kantar Worldpanel Usage for the 52 weeks ending July 2017.

The company’s new loaf is packed with 11 pulses, seeds and grains to provide consumers with an easy way to incorporate added protein into their everyday diet.

These include black, red and Navy beans, chickpeas, yellow lentils, malted rye and wheat flakes, oats, and sunflower and sesame seeds and brown linseeds.

The Pulses & Seeds Batch will be available in 400g (£1.14 - $1.60) and 800g ((£1.94 - $2.73) loaves exclusively in Asda now and in other stores in the coming months.
