Cargill adds new chocolate product to portfolio

Food ingredients manufacturer Cargill has launched a new fine cocoa
powder for use in the confectionery industry which can be marketed
as a 'pure chocolate'.

As the newest addition to Cargill's Peter's product range, the chocolate is a semi-sweet chocolate ground powder ideal for use as a drinking chocolate but also appropriate for decorating cakes, tortes and other dessert items. It can also be used as a seeding agent for tempering chocolate during the manufacturing process. Cargill claims the Finely-Ground Semi-Sweet Burgundy chocolate is process friendly as it eliminates the need for grinding blocks or wafers and is versatile – the powder has the potential to create a variety of flavoured products by adding spices to the mix. The company said: "Chocolatiers can make drinking chocolate with fruity, winey undertones. In addition, they can create their own signature-flavoured drinks by adding spices, or they can simply repackage the product and sell it to their customers."
