Better baking
has assembled two large scale bakery processing models for
baguettes, bread and rolls - the Thermo-Roll and the Backmiester -
which, the company believes, delivers convincing baking results
consistently.
The Thermo-Roll and Backmeister industrial ovens offer similar benefits as they both serve similar purposes, to bake bread in its different forms and to ensure that the maintenance of key baking factors such as moisture migration and oven temperature is controlled.
The hallmark of the the ovens is their 'radiant heat' feature, a convection current that consists of two different turbo heating options, that run through the baking chambers. They are also capable of running simultaneously.
With both systems running at the same time, it vastly increases the heat transfer - particularly important for baking rye and tin-baked breads - and therefore largely reduces the total baking time, the company claims.
The high temperature the ovens reach in the baking chamber is ideal for the baking of rye breads. This gives the bread a much longer lifespan, and allows quality to be maintained for a much longer period of time - thus making the ovens much more cost effective.
