Crisp Sensation claims deep-fried feeling with latest crumb coatings

Crisp Sensation Holding SA has developed five crumb coating flavors for frozen and chilled snacks it claims give deep-fried crispiness without a deep fryer.

Alongside its Original Crisp Sensation crumb coating, the coated snacks technology provider has introduced five additional variants for snack manufacturers.

Crisp Sensation coatings are suitable for all kinds of snacks and products, including mozzarella sticks, meat and fish nuggets,  onion rings, vegetable bites and even sweet treats.

Flavour and grains

The flavors include Home Style, Wholegrain, Tempura, Southern Fried and Cornflakes. Home Style and Wholegrain crumbs are also available in different grain sizes.

Researchers at the company’s IFS (Intelligent Food Solutions) development center in the Netherlands developed a technology that allows the outer coating to become extra crispy, even in an oven. 

Gerrit Dreise, commercial director EMEA, told BakeryAndSnacks that Kwekkeboom in the Netherlands launched the first oven products using Crisp Sensation’s patented coating system at the end of 2014.

He added that Crisp Sensation has developed coating systems that offer deep-fried crispness when cooked in the oven, AirFryer, TurboChef; even, with some limitations, in the microwave.

“The value proposition for our customers is deep-fried crispness without having to use the deep-fryer,”​ said Dreise.

The multi-step process ensures that the coating stays intact and attached to the snack during reheating, without getting soggy or bursting. As such, fewer products are spoiled and thus thrown away.

Reduced-fat options

Depending on the formulation and preparation method, even reduced-fat products can be achieved.

Based in Geneva, Switzerland, Crisp Sensation Holding SA has a global footprint, with offices in Chicago and Singapore.

Under license from the company, manufacturers of chilled and frozen snacks, as well as canteen and catering system suppliers, can use the globally-patented technology.

UK consumers want crispiness and convenience

While there are oveanable crumb-coated products available in the UK, Dreise contended that they don’t achieve the same crispiness as deep-fried products.

“We have done consumer research in the UK and have learned that the consumer loves the Crisp Sensation deep-fried crispness in combination with the convenience of cooking in the oven.

“We’re currently working on several projects in the UK developing products that will suit the local consumer, and expect UK producers to launch the first products using our ingredients in 2017,”​ he said.

He added that the company does not expect any negative effects of Brexit on its potential to gain new business in the UK.
