Reading Thermal aids with FSMA kill step validation compliance

Reading Thermal has introduced software to help users/bakers comply with the Food Safety Modernization Act’s kill step validation requirements.

The Scorpion Software (SV8) Food Safety Module analyzes product core temperature data, collected with the Scorpion 2 System, to validate the baking process kill step.

It has three steps: data collection, lethality calculation and kill step validation.

The Scorpion 2 Lite Data Logger with Temperature Interface and Product Probes measures the environment and internal product core temperatures.

After collecting the data, SV8 calculates lethality and generates a report displaying cumulative log reduction and several graphs.

Richard Starke, director at Reading Thermal, said by combining measurement with data capture the system makes it possible to optimize baking processes while meeting food safety standards.

“Controlling the internal temperature of food products is critical for attaining the degree of safety demanded by today’s marketplace.

Reading Thermal is a part of Reading Bakery Systems, a manufacturer of baking and process systems for the baked snack business.
