DuPont blends allows bakers to meet clean label challenges

DuPont Nutrition & Health’s Grinsted Freedom blends gives food producers the freedom to create their own optimized blend from clean label ingredients.

Today, health-conscious consumers want cleaner, shorter food labels with words they can pronounce and practical ingredients.

However, while it sounds like a simple thing to do, developing clean label formulations can be complicated for food manufacturers.

“Clean” has yet to be clearly defined and the potential solution for cleaner labels varies by company, product and channel.

As there is no one-size-fits-all-strategy, DuPont has introduced a range of product blends that provide customers with new and original product solutions, not repurposed ingredients that are simply deemed “clean label”.

Shorter declaration lists

According to Philippe Bax, regional product manager, Americas – System and Texturants, the Grinsted Freedom range is the umbrella under which the company has developed its portfolio offering.

“We have different versions of blends based on different functional ingredients, like lecithin and salts, but primarily enzymes. The solution is really about enabling shorter declaration lists and offering non-GM or organic options,”​ he told BakeryandSnacks.

Customers are given access to DuPont Danisco’s extensive ingredient range of both internally and externally manufactured ingredients, as well as expert bakery experience.

“Once our customers share with us their challenges, cost expectations and ingredients acceptable for their clean label definition, we can begin working on a solution that meets their specific needs,”​ said Linda Dunning, regional product manager – System and Texturants.

“While creating cleaner label strategies, DuPont can help customers map each of their brands as well as communicate moving from using legacy ingredients toward cleaner formulations,”​ she said.

Bax added the Grinsted Freedom range will be first rolled out in the US, and then globally, depending on local regulations and expectations.

“The initial product is focusing first on bread applications and will be extended to other bakery fields soon,” ​he said.
